What is kimchi?
Kimchi is perhaps the most famous Korean dish—a traditional side dish of fermented cabbage, carrots, radishes, onions, ginger, garlic, and other traditional ingredients. Being a fermented blend of healthy vegetables and spices, kimchi is packed with many different strains of lactic acid bacteria (LAB), which give kimchi its unique flavor and wide-ranging health benefits.

What does kimchi taste like?
Kimchi has a unique taste that makes people either love it or hate it. It is sour like vinegar and has a dominant garlic flavor. Being fermented, it is pungent in taste and smell and can upset your taste buds with its fizz. Kimchi is less acidic than sauerkraut but is spicier. During ripening, kimchi can be adjusted to personal taste. The longer it ripens, the sourer it becomes.
The origin of our kimchi base is the open-pollinated cabbage variety 'Marner Lagerweiss' from Kultursaat e.V., grown and regionally adapted on our biodynamic farm in Hedwigenkoog - in the heart of the traditional cabbage-growing region of Dithmarschen in northern Germany.
The cabbage is chopped, seasoned with traditional ingredients such as ginger, chili and garlic, salted with rock salt from the Luisenhall salt mine in Göttingen and then tightly packed into jars. When the kimchi matures in the jar, without interruption by pasteurization, the valuable and biologically active components are preserved. Stored in the refrigerator, it can be kept for three months.
The labels and packaging are developed by a sub-project of the Stiftung Mensch, Germany's largest social enterprise.

Hot and sour kimchi is a staple in Quranic cuisine and can be eaten in a variety of ways. The cabbage and herbs pair perfectly with Asian rice and meat dishes of all kinds, or they can be used as the base for delicious soups. You can add kimchi to scrambled eggs, toss it in tacos or pizza, spread it on grilled cheese, stir it into soups or stews, or eat it straight from the jar.
Some people may want to warm kimchi. Heating seems to mellow out the fresh, tangy taste and aroma. However, kimchi may lose most of its probiotics if you heat it above 105°F (41.1°C).
For the best benefits, add unpasteurized fermented kimchi from the jar to your food. And when you get to the bottom, don’t throw away the remaining kimchi juice because it’s the best part. Moisten it or pour it over your salad.
A typical serving of kimchi is about 100 grams. That's at least how much the average Korean consumes on a daily basis.
