Quinoa can be used like rice, stuffed with chicken or grape leaves, or used like bulgur in tabbouleh. Red quinoa holds its shape better, and has a better flavor. Use red in salads and white in soups. Basic recipe: Rinse quinoa in a colander. Bring 4 cups of water to a boil with 2 cups of quinoa. Cover and simmer for 15 minutes.
